For some time I've been experiencing a maddening damp, cold sensation
deep in my left ear. It almost feels like it's down in my eustachian
tube, near my throat. Every doctor who's ever looked in there says
things look normal and I have no fluid behind my eardrum.

Some days, it's worse than others. I also get noticeable post-nasal
drip only on

Ear canals can trap water from showering. Wax can be of various consistencies, including watery. And, there are sebaceous  glands in the skin of your ear canal. Less likely would be a rupture of the your eardrum, with leaking of fluid from the middle ear space but probably not because you have had doctor's look at it.  Have you tried having an ear lavage?
